Oreo, Popping Candy, Salted Caramel and Chocolate Popcorn

This weekend it was my cousin's birthday and since he has the sweetest of sweet tooths I set about coming up with the most ridiculous dessert I could. As the title of this blog suggests, the result was something quite spectacular and I'm sure it fulfils any kid's dream (big or small!). The recipe is incredibly easy and would be great to make with children so long as they didn't operate the stove.



Surprisingly this 'dessert' isn't actually all that sweet as the salt in the caramel counteracts a lot of the sugary elements making this popcorn extremely addictive - make this and you'll keep going back for more!



Oreo, Popping Candy, Salted Caramel and Chocolate Popcorn
Serves 4


2 tbsp vegetable oil
100g popcorn kernels
100g dark chocolate, broken into pieces
75g unsalted butter
50g golden syrup
2 tsp coarse sea salt
½ packet of oreos
45g popping candy

Line 2 baking trays with greaseproof paper.

In a large saucepan with a tight-fitting lid, warm the oil over a medium heat. Pour the popcorn into the saucepan and cover it with the lid. The corn will begin to pop quite quickly. When the popping slows down and most of the kernels have popping, remove from the heat and open the lid to let out the steam. Set aside.

In a food processor, pulse the oreos to a coarse crumb. Set aside.

Melt the butter and golden syrup together in another pan, stirring continuously. Once they're combined and the butter is fully melted add the salt.

Pour the salted caramel over the popcorn and stir well to coat. Add the oreos and again stir thoroughly so that the oreo dust is fully incorporated. Tip the popcorn onto the lined trays and spread out to cool.

Melt the chocolate in a small microwave-safe bowl, heating it for 30 seconds at a time and stirring between blasts. Once it has melted, combine it with the popping candy then, with a spoon, drizzle it over the popcorn. Allow to cool to room temperate and serve.
