Brilliant BBQ Sauce
I'm going to go out on a limb and say it... Summer has arrived in the UK! Hurrah! So the only natural thing to do is to crank up the barbeque and get your mates round for some great food!
One of the most essential things necessary for a cracking barbeque is a good sauce to coat all the meat and my take on a BBQ sauce ticks all the right boxes. It's sweet, sour, tangy, with a touch of heat and a whole load of flavour! It's the easiest thing in the world to make so you have no excuses for buying the ready made stuff again. So slather it on your sausages, bang it on your burgers or even marinate your meat in it!

Makes ½ pint
1 small onion, chopped
3 cloves garlic, crushed
olive oil
1 red chilli, finely chopped
1 tsp fennel seeds, crushed
55g dark brown sugar
50ml dark soy sauce
300ml tomato ketchup (find my homemade ketchup recipe here)
salt and pepper
Fry the onion and garlic in olive oil with the chilli,
fennel seeds and sugar. Add the soy sauce and ketchup and season with salt and
pepper. Bring to the boil and simmer for a few minutes to combine the flavours.
Use as a dip or to coat spare ribs, chicken or sausages.
TIP: Don't be afraid of the quantity - it keeps in the fridge for at least 6 weeks so you can bring it out time and time again.
