Totally Tasty Turkey Stir Fry

You really can't beat a good stir fry. They're quick, healthy and super easy to prepare so I tend to have them quite a lot when I need something to eat in a hurry or if I'm feeling a bit lazy. Turkey is a really lean meat and it's a great way to get protein into your diet without any extra fat so this meal is doubly good for you!

This is a REALLY tasty mid week meal that doesn't cost a fortune, plus everyone I have ever made it for has loved it so you're sure to please whoever you make it for - even yourself!

Totally Tasty Turkey Stir Fry
Serves 4

400g turkey breast, chopped into chunks
1 tbsp oil
1 red pepper, sliced
2 sweet potatoes, quartered then thinly sliced
200g spinach
1 large onion, finely diced
2 garlic cloves, finely chopped
1 inch piece of ginger, peeled and grated
1 red chilli, finely chopped
1 lime, juice only
1 tbsp dark soy sauce
1 tbsp sesame oil
300g pack egg noodles

Heat a large wok over a high heat. Add the oil, onion, garlic, ginger and chilli and stir fry for 2-3 minutes. 

Add the turkey and brown on all sides. Add the red pepper and sweet potatoes and continue to fry for 1 minute. Add the rest of the ingredients apart from the egg noodles and bring to a boil.

Meanwhile, cook the noodles according to packet instruction, drain and add to the wok. Mix the noodles into the stir fry and then serve immediately.
