Tremendously Tasty Tomato and Basil Chicken

Once more, I am providing you with an incredibly healthy recipe that tastes out of this world! The chicken is flavoured in such a way that it kind of tastes like it has been infused with pizza sauce, in the best possible way. This makes it ideal for sharing with the whole family - I find it helpful to call this "Pizza Chicken" to make kids excited about it!

Incredibly succulent and full to the brim with flavour, this chicken dish is anything but boring. What's more, it's super simple and is great for anyone who is trying to shift a few pounds or keep their family healthy.

I like to serve this with a crisp, fresh salad and a handful of sweet potato 'fries' that have been baked rather than fried with minimal oil. So without further ado, I give you healthy but yummy chicken and chips!

Tremendously Tasty Tomato and Basil Chicken
Serves 4

For the sweet potato fries:
500g sweet potatoes, washed and cut into very thin fries
1 tbsp olive oil
Salt and freshly ground black pepper
For the chicken:
3 tbsp tomato puree
juice of 1 lemon
2 cloves of garlic, minced
1 tbsp dried basil
2 tbsp balsamic vinegar
A handful of fresh flat-leaf parsley, finely chopped
For the salad:
Mixed salad leaf
Cherry tomato
& whatever else you fancy!

Preheat your oven to 200C/gas 6. Boil the fries for 1-2 minutes, then drain and spread out on a baking tray. Drizzle over the oil, season really well and mix thoroughly. Bake for 15 minutes, or until lightly golden.

Preheat your grill to medium-hot. Mix together the tomato puree, lemon juice, garlic and basil. Put the chicken in a shallow, ovenproof dish, then spread over the tomato mixture and toss well to coat.

Season the chicken and grill for 4-5 minutes. Then turn over and grill for a further 4-5 minutes on the other side, until cooked through (the juices will run clear when a knife is inserted into the thickest part of the breast).

Divide the chicken between four plates, garnish with the parsley and serve with the fries and salad.
