Spicy Feta Dip
As someone who could live on crisps, I absolutely love a good dip! This is a super simple and very delicious dip that works great scooped onto crisps but also as part of a little pita bread canape making it ideal for entertaining.
You could also use it as a salad dressing or even as part of an epic sandwich. It's vegetarian and can be made in advance - basically it ticks all of the boxes! A good quality oil will make a big difference so splash out if you can and enjoy!
Spicy Feta Dip
240g feta cheese
170g jarred red peppers (drained weight)
3 tablespoons olive or rapeseed oil, plus a little extra
1/2 tsp dried chilli flakes
sea salt and freshly ground black pepper
In a food processor combine the feta, red peppers, 3 tbsp oil and chilli flakes. Season with a little salt and a big pinch of black pepper then blend until smooth. Transfer to a bowl, drizzle with a little extra oil and then serve.
For a canape, toast a couple of pita breads, cut into bitesize pieces and top with dollops of the dip. Sprinkle over a little extra feta and then serve.
