Grilled Peach, Halloumi and Gem Lettuce Salad (Vegetarian)
I am becoming a little bit obsessed with grilled gem lettuce at the moment - I know, how exciting! But seriously, if you haven't tried it, you have to give it a go.
Here I have added in charred peaches, which are bang in season right now, for sweetness and halloumi for saltiness as well as a zingy lime-based dressing. This is great served warm for dinner and is just as good cold the next day for lunch.
Preheat a griddle pan over a high heat and a small frying pan over a medium heat.
Meanwhile add a little oil to the frying pan and fry the halloumi for 1 minute on each side until browned.
To serve, arrange the peach, lettuce and halloumi pieces on plates, spoon over the stepped onions and then drizzle with the rest of the dressing.

Serves 2
oil
2 peaches, halved and pitted
2 gem lettuces, halved
1 small red onion, very finely sliced
100g halloumi, cut into chunks
sea salt and freshly ground black pepper
For the dressing:
1 heaped tbsp honey
1 lime, juice only
1 tbsp olive or rapeseed oil
1 tsp za'atar
Combine all of the dressing ingredients in a bowl with a good pinch of salt and pepper, add the onion slices, mix and leave to steep whilst you crack on with the rest.
Preheat a griddle pan over a high heat and a small frying pan over a medium heat.
Brush the peach and lettuce pieces with a little oil on all sides and season with salt and pepper. Grill in batches in the griddle pan for 2 minutes on each side.
Meanwhile add a little oil to the frying pan and fry the halloumi for 1 minute on each side until browned.
To serve, arrange the peach, lettuce and halloumi pieces on plates, spoon over the stepped onions and then drizzle with the rest of the dressing.
