Lime and Chorizo Chicken with Garlic Roast Sweet Potatoes

It's 2019 and the blog is back! After an extended Christmas break filled with plenty of indulgence, and like many of you I'm sure, we are trying to cut back a bit and shift the December bulge...


This dish is a flavour explosion! Vibrant lime, salty soy sauce, sweet honey and slightly fiery chorizo all come together in perfect harmony alongside crispy chicken and roast sweet potatoes - to die for!

Lime and Chorizo Chicken with Garlic Roast Sweet Potatoes
Serves 4

oil
6 skin-on, bone-in chicken thighs
200g chorizo, skin removed and chopped into chunks
3 limes, juice of all and zest of one
30g honey
20ml soy sauce
4 small/2 large sweet potatoes, peeled and chopped into chunks
1 tsp garlic powder
1 tsp dried oregano
3 gem lettuce, shredded
sea salt and freshly ground black pepper

Preheat the oven to 200C. Put the chicken thighs in a large roasting tin, drizzle with a little oil and season well with salt and pepper. Roast for 15 minutes skin side up. At the same time, put the sweet potato chunks into a roasting tin with a little oil, the garlic powder, oregano and a good amount of salt and pepper. Toss together and put into roast while you get on with the rest.


Whisk together the lime juice, zest, honey and soy sauce. Once the chicken has had 15 minutes, add the chorizo to the roasting tin then drizzle over the soy mixture. Return to the oven and cook for a further 20 minutes until the chicken is cooked through and the skin is crispy.


To serve, divide the chicken thighs (one and a half each) and chorizo between four plates. Put the lettuce and sweet potato alongside and then dress with the cooking juices.
