Courgetti with Pesto, Sundried Tomatoes and Mozzarella Pearls

Ok, I'll be honest, this isn't exactly a recipe as much as it's an assembly job but it tastes great, it's super simple, incredibly quick to make, really healthy, cheap as chips and only dirties one pan - what more do you need!

I tend to make this in big batches and use it for my lunches at work but it's just as good for a lazy dinner. I've added mozzarella and sundried tomatoes here but feel free to switch it up and add chicken, different cheeses, olives - whatever you like!

Courgetti with Pesto, Sundried Tomatoes and Mozzarella Pearls
Serves 2

oil 
1 clove garlic, finely sliced
handful sundried tomatoes, drained and roughly chopped
250g courgette spaghetti 
2 tbsp fresh pesto 
approx. 10 mozzarella pearls, drained

Heat a good drizzle of oil and the garlic clove in a frying pan until hot, then add the chopped sundried tomatoes and fry for a couple of minutes. Add the courgetti and continue to stir fry until any water has evaporated and the courgette is very lightly coloured.

Remove from the heat then stir through the pesto along with salt and pepper, to taste. Top with the mozzarella and serve.
