Brilliant Baked Avocado Eggs
Making food for one can sometime sbe a bit of a struggle especially when it comes to breakfast - usually just a bowl of porridge or a smoothie! This weekend I wanted to treat myself so I had a bit of an experiment and it paid off... I give you - Baked Avocado Eggs!
Healthy, easy and totally different to anything I've tasted before, this is quite possibly the perfect meal for one. It's low cost but it still feels like a treat and it can be rustled up within minutes. Warm, creamy avocado, slightly runny egg yolk and a gentle kick of paprika - the stuff breakfast dreams are made of!
Brilliant Baked Avocado Eggs
Serves 1
1 avocado
2 eggs
salt and pepper
To serve (optional):
olive oil
mushrooms, roughly chopped
sourdough toast
paprika
Preheat the oven to 180C.
Cut avocado in half, remove seed and scoop a bit of avocado, so you can fit more egg into it. Break an egg into a bowl, using a spoon place yolk in avocado, and then carefully start to add white (if your egg is too big you won’t manage to add all the white). Season with salt and pepper and repeat with the other egg and half avocado.
Scrunch up some tin foil to make a holder for each avocado half to stop them wobbling around. Bake in the pre-heated oven for 15-20 minutes or until white comes together. Meanwhile, fry the mushrooms in a tablespoon of oil until tender. When the avocados are ready, serve with the fried mushrooms, toast and a sprinkling of paprika.
