Posh Prosecco and Limoncello Jelly
With New Year's Eve fast approaching, it's time to start preparations to ensure your 2014 goes out with a bang! This recipe combines everything you need for the perfect New Year's Eve party - cocktails, fizz, nostalgia and fun!
The zing of limoncello and light, bubbly prosecco combine to create a grown up jelly with more than a little class. They are easy to make, can be prepared in advance and completely look the part with a sophisticated shimmer of glitter over the top.
Posh Prosecco and Limoncello Jelly
Makes 6
5 gelatine leaves
6 tbsp limoncello
1 tbsp caster sugar
350ml Prosecco
edible glitter, for sprinkling
Place the gelatine leaves in a bowl of cold water for 5 minutes or until soft. Squeeze the leaves and discard the water.
Put the limoncello into a bowl that fits snugly over a pan of boiling water, add the gelatine and sugar and heat gently until dissolved. Remove from the heat, add the Prosecco and pour into a jug.
Very carefully and slowly, pour over the jelly into the glasses until each glass is almost full. Refrigerate until set. Top with gold glitter to serve.
