Beautiful Baked Figs

The fig season is coming to an end, which greatly saddens me as figs are one of my favourite fruits, so I urge you to get them quick and make this yummy dish!

Figs are not just for dessert, they also go really well with salty food like goat's cheese and parma ham, which I also loooooove. This dish is a big hit with my family and friends too, and I often make it as a canapé or starter when I'm entertaining as it's super easy and it can be prepared well in advance. These beauties also work well as a snack or side dish or even as a tasty lunch with a salad. Everything in this recipe works together in total harmony and, if you get the best ingredients you can afford, the taste is truly special.

Beautiful Baked Figs

8 large fresh figs 
125g rindless soft goats' cheese 
3 tbsp clear honey
8 slices of parma ham
freshly ground black pepper
small bunch of fresh thyme

Preheat the oven to 220C.

Slice a cross into to the top of the figs and, using your fingers, squeeze the four quarters to open up the cross. Lightly grease a baking tray and place the figs on top. Divide the the goat's cheese into 8 and put a piece into each fig cross. Wrap each fig with a slice of parma ham, drizzle with the honey, pick over the thyme leaves and season with black pepper. (You won't need salt as the cheese and ham are salty enough.)

Bake for 8-10 minutes until the cheese has melted and the ham has become crispy. Serve warm.

TIP: I like to drizzle over a bit of balsamic vinegar glaze (available in all the larger supermarkets) or you can make your own at home by reducing some balsamic vinegar in a non-stick pan until sticky.
