Luscious Lamb Burgers with Scrumptious Spicy Sweet Potato Bake

We all want to look good for Christmas but we also want to treat ourselves and these two things generally don't go hand in hand. This recipe, however, will fulfil all of your needs - it's packed full of flavour and is basically a healthier take on a burger and chips.

The lamb burger itself is incredibly special since it has everything a beef burger would have except it's juicier and tastier! I like my burgers meaty and so I don't add anything to the meat apart from a spiced coating before I grill the burgers. To accompany these heavenly patties, I like to make pimped up roasted sweet potatoes, with red onions and feta cheese as well as a good kick of spice.

Luscious Lamb Burgers with Scrumptious Spicy Sweet Potato Bake
Serves 2

250g minced lamb
½‎ tsp sea salt
½‎ tsp black pepper
½‎ paprika
½‎ dried oregano
½‎ ground cumin
2 tsp olive oil
50g cheese (optional)
For the sweet potato bake:
250g sweet potato, cut into chunks
1 red onion, cut into wedges
40g hot sauce
pinch of dried thyme
1 tbsp olive oil
50g feta cheese

Preheat the oven to 200C/180C fan/gas 6. Place all of the ingredients for the sweet potato bake, minus the feta cheese, into a bowl and using your hands, mix to coat with the sauce and olive oil. Season with salt and pepper. 

Tip the ingredients onto a baking tray and bake in the oven for 35 minutes, or until the potatoes are cooked through and golden brown. 

In the meantime, divide the lamb mince into two equal balls then flatten them out with the palm of your hand until they resemble burgers. In a shallow bowl or on a plate mix together all the herbs and spices with the olive oil. Press the burgers into the spice mix, coating them on both sides. Heat a griddle pan on a really high heat and cook the burgers for five minutes on each side, making sure to leave them completely alone apart from the flip. Once cooked, place on a board or a plate an cover with tin foil to let them rest.

Crumble the feta cheese on top of the potatoes and pop back into the oven for 5 minutes, or until the feta is golden and bubbling. Serve immediately with the burgers and I personally don't think you can beat a bit of cheese on top!
